Taiwanese Boston Cream Donuts

I know, I know, the title didn't make any sense.  It's the best way to describe this supposedly tasted better when cooled in the fridge bun.


The dough is baked, not fried.  The cream is fluffy with 1/3 whipped cream, not as dense as Boston cream.  There is also no chocolate icing on top.  😨 I am very sorry to disappoint you.

Since I have so much luck baking with 宗辰的職人日誌, I decided to do it again.  I love watching his YouTube videos because the baking goods reminiscence of what I saw and had in bakery shops back when I was young.  

This "Taiwanese Boston Cream Donuts" is an exception though.  I have never had it before.  I decided to try because there is a play date soon.  Play dates are wonderful opportunities to bake, since everyone shares, and we won't be stock with ten thousands buns.  😒 Nothing tastes good after you have too many.  Note I made 36 little buns (yes... 36!), by doubling the sweet dough recipe.  😳 Believe me, even after I doubled the recipe, I am still left with a lot of fillings.  😌 Looking at the picture above, I did fill up the bun reasonably...


Here is a repeat of "my dough", which is double of the original recipe shown in YouTube with a slight modification.

MY DOUGH             麵團 🍞  

bread flour          高粉          500 g
sugar                  細砂          80 g
salt 鹽巴          6 g
milk                   牛奶          300 g
egg               蛋黃          1
active yeast         酵母     5g    
non-salt butter     無鹽奶油    60 g

About custard filling.  This time, 宗辰師傅 - Zhong Chen Shifu did a wonderful, wonderful job in the description, with both Chinese & English.  Below is a cut & paste.  😶 Should I put quote around it?

To be honest, it's one of my worst experience trying to fill up these little buns.  It's not as easy as it seems.  A couple of disposable piping bags got busted and required clean up.  I also forgot to mix in the whipped cream (the "2" label) and only realized it after I put "1" in the piping bags.  😱  What a mess!

😂 I am so stuffed eating failure buns...  Would I make it again?  I would if the kids like them (😦... plus I still have a lot of filling).  But I will however, cut the buns open and pipe in the cream instead of poking a hole and fill it.

葱油餅 Taiwanese Scallion Pancake

I love  葱油餅 Green Onion Pancake / Scallion Pancake.  It's a street food.  Yeah, people sell food on the road side, such as this video .  Welcome to Asia. Besides having growing green onions at home, I was searching for ways to use up my sourdough discard.  What's that you might ask.  Well, last winter some lady gave me a small ball of sourdough starter, and the new family member - Hope - the name I gave to my starter (yes...) was "born".  Hope requires constant feeding.  Some say, you have to replenish sourdough starter every day.  To let you know how wasteful it might be, say if you have a 100g of sourdough starter, you would have to feed equal amount of water and flour daily.  How does it look like?
